As per cook product was reheated on stove top this morning before placing in hot well. 3 of 5 hot wells low on water and same units well water maximum temperature is 150 F. Product discarded. Tech called out on site, units were corrrected at inspection allowing for well water to reach over 180 F so as to be able to maintain product at 135 F or greater. Reviewed how to check thermometer calibration using ice water at 32 F
