Specialized processing method used without required variance (corrected on site)
Inspector notes: Observed Reduced Oxygen Packaging (ROP) items in the freezer for sale. Several items were heat sealed but the items that were fully ROP'ed were beef empanadas, chicken empanadas, egg empanadas, white corn cakes, yellow corn cakes and sweet corn cakes. Observed no variance approval for the ROP products. Per person in charge (PIC) the packages were made 4 days prior to inspection and they are planning on transitioning from into new packaging soon and will no longer be utilizing the ROP machine in the near future. Discussed with PIC in order to ROP, a variance/HACCP must be obtained prior to conducting any specialized processes. Variance/HACCP applications are available through the customer portal "Permit Center" at https://maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home. Additional resources can be found at https://www.maricopa.gov/3978/Food-Variances. PIC was able to pull the items from the freezer and open the packages to reheat seal in order to allow oxygen into the packaging
