Inspector notes: Observed a new item sign that offered a fried egg. There was no consumer warning or disclosure on the sign. Discussed with person in charge (PIC) that they needed a consumer warning. PIC used a pen to write the warning and the asterisks at time of inspection. PIC stated that they will include/change the main menu if the dish becomes a regular part of the menu. Offering and serving undercooked proteins requires an approved consumer advisory at all points of sale; and must contain an approved disclosure method and reminder statement

Inspector notes: Observed frozen raw chicken in a container thawing. Discussed approved thawing methods with person in charge (PIC). PIC moved the container to the cold-holding unit to finish thawing at time of inspection. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process
