Equipment lacks capacity to maintain safe food temperatures
Inspector notes: Observed the following time/temperature controlled for safety (TCS) foods with internal temperatures 48*F - 65*F in the refrigerated display case for noodles: butter, cheese, cream cheese, sausages, probiotic yogurt drink, yogurt, cabbage kimchi and fish cakes/fish balls. The measured ambient temperature using a min/max thermometer was 60.8*F - 61.5*F; the person in charge (PIC) indicated the unit was in a defrost cycle. The PIC indicated that they did not verify the case temperature today and they did not know which foods had been stocked today. All TCS foods improperly cold held in the refrigerated display case were discarded by PIC at time of inspection. Also observed sprouts with internal temperature of 45*F - 48*F in a sliding door refrigerated case in the produce area. The measured ambient temperature of the case using a min/max thermometer was 44.2*F. An employee indicated the sprouts had been stocked in the case ~3 hours before inspection. Sprouts improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below
