Inspector notes: In the walk-in cooler, observed a pan of beef tenderloins seared on exteriors with undercooked centers. PIC indicated that the beef is not cooked to 155F at this point, and they use a non-continuous cooking process; however, the beef was not labeled "par cooked" and written procedures were not available. Code requirements for non-continuous cooking were reviewed, and written procedures were written during the inspection. The beef was labeled "par cooked" as well.
