The person in charge (PIC) indicated they were sliced between 8:00AM and 9:00AM and did not monitor their internal temperatures. PIC states whole tomatoes are kept refrigerated, washed with cold water, sliced, and put in walk-in refrigerator to cool down. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. All TCS foods improperly cooled were discarded by PIC at time of inspection. PIC stated instead of utilizing prep table to cool, they have started using walk-in refrigerator. Discussed use of ice bath in deep pans and placing cut tomatoes in one layer in metal containers for them to effectively cool to 41*F within 4 hours
