Per the PIC, the items were placed out at 11:00 AM and discarded between 2:00 PM – 2:30 PM. While the facility uses a whiteboard with checkmarks to track when items are swapped, there is no recorded 'start' or 'discard' time for the individual food items. All TCS foods being held under time as a control were properly time stamped at time of inspection

Inspector notes: Observed an employee on their phone and then switch over and don gloves at the cook station. The employee was stopped and told to dispose of the now soiled gloves and first wash their hands prior to donning a fresh set of gloves. Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Gloves are not a replacement for proper handwashing
