An employee stated the ham was removed from cold holding and placed on grill approximately 15 minutes prior to the inspection. At the time of inspection, the ham was reheated to 165°F and placed directly inside warming drawer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above

Inspector notes: Cut lettuce found in containers in walk-in with their lids squarely on top and some were stacked together. The ambient temperature in the cooler and air blowing out of the unit was 45*F at the start of the inspection and the internal temperature of the lettuce was between 43-48*F at 10:30 AM. Temperatures verified with both PIC's and inspectors calibrated probe thermometers. The lettuce began cooling at 6:00 AM today. PIC discarded the lettuce. Please ensure cooling TCS food items are monitored during cooling, best methods for cooling are employed, and required cooling temperatures and time frames are met. Ambient temperature of the cooler and air coming of the unit was at 40*F and 37*F respectively by end of inspection. Discussed monitoring of the walk-in with PIC
