Inspector notes: Observed sliced tomatoes, cut lettuce, american cheese, and swiss cheese ranging from 54*F to 75*F in the make-line and taco station without a time mark for when it was placed out of temperature control. Per PIC, the food items are being held under a four hour time as a control. Per PIC, the food items were placed in the units approximately one hour prior to inspection. PIC set the timers for all food items listed at the time of inspection and will discard any remaining after 3 total hours out of temperature control. Discussed proper “time as a control” procedures with the PIC and the importance of proper documentation
