Inspector notes: -- Observed quat sanitizer solution dispensing at levels well above 400 ppm at 3-compartment sink. Buckets and shake mix sanitizing containers were set up throughout the kitchen with concentration levels exceeding 400ppm using quat test strips. Reviewed quat concentration ranges: must be between 150ppm and 400ppm. Sanitizer was diluted by PIC to approved levels at time of inspection. Discussed with PIC placing a work order to adjust/calibrate dispenser so that it dispenses quat sanitizer between the levels of 150ppm-400ppm. Employees will continue diluting 3-compartment sanitizer compartment and sanitizer buckets with water until repairs are completed

Inspector notes: -- Observed grilled onions sitting in container in microwave at 85°F using probing thermometer. The person in charge unsure how long the onions were in the microwave. All TCS foods improperly hot held were discarded by PIC at time of inspection. Recommended cooking grilled onions to order for immediate service. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above

Inspector notes: -- In walk-in refrigerator, spicy chicken strips had prep date mark label of 08/09 on the container. The person in charge stated the label is incorrect, and the chicken strips were thawed from frozen/prepped on 08/17 with ready-to-eat (unfrozen) date of 08/18. All RTE/TCS foods were properly date marked at the time of inspection. Discussed with PIC ensuring employees are removing old labels from cleaned/sanitized containers before placing new product in them. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)
