Inspector notes: Employee observed cracking eggs with gloved hand and touched the raw egg in the pan to remove fallen egg shells, they then wiped gloves on apron and grabbed cooked sausage and bacon to plate. The employee was asked to remove gloves, wash hands and put new clean gloves on before continuing. The cooked sausage and bacon that was touched with contaminated gloves were discarded. PIC coached the employee and shared examples of when to wash hands and glove use limitations. Employee properly washed hands and put on clean gloves before plating

Inspector notes: Observed a chlorine dishwasher with 0ppm of chlorine concentration after final rinse. Plates were being washed at time of inspection. Chlorine test strips were available and easily accessible. PIC primed the dishwasher, each time, there was 0ppm of chlorine after final rinse. PIC called for service at time of inspection. The ultrasan container feeding the dishwasher was low, PIC stated that there will be more delivered the following day. Advised PIC to use the 3-compartment sink until dishwasher is fixed. The quat dispenser a 3-compartment sink was dispensing proper quat concentration between 200-400. PIC set up the sanitizing solution at 3 compartment sink and advised staff to sanitize all dishes at the 3-compartment sink
