Inspector notes: Observed cooling, blanched bacon in walk-in cooler with an internal temperature of 68-74F, probe thermometer, verified by PIC. The bacon was blanched at 3:40 am, 8 hours prior to inspection. Half of the bacon was placed into a very deep, covered plastic container and the other half was divided into 2 shallow covered containers and stacked on a rack in the walk-in cooler. The bacon failed to cool to 41F in 6 hours. PIC discarded the bacon, see embargo form. Discussed the procedure and times/temps for cooling. PIC will retrain employees. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling
