Inspector notes: Observed walk-in cooler holding ambient air temperature of 51*F at start of inspection. All cold TCS foods stored in walk-in cooler such as TCS ranch dressing, milk, heavy cream, raw bacon, nacho cheese, salsa, mixed cheese, cheddar, swiss, provolone, American, pepper jack, pico de gallo, chihuaha cheese, goat cheese, raw shelled eggs, cooked wings, ground beef, meatballs, hot dogs, coleslaw, lettuce, with an internal temperature of 49-50*f. PIC had previously noticed rise in temperature of walk-in cooler. The establishment did not have adequate refrigeration to sustain business operations. PIC made a service call to get cooler repaired and was instructed to contact health department when repairs are completed and cooler is maintaining temperature below 41*F in order to have suspension lifted to operate. All TCS foods were set aside to be discarded
