Inspector notes: Observed employee placing three bins of individual cream cheese and butter patties that were used under Time as Public Health Control (TPHC) in the reach-in refrigerator when breaking down the breakfast line. The bins did not have a time stamp. Per PIC the items are under TPHC and the internal temperature of the items were 60- 69*F. PIC was unable to locate the policy or show a log of times and temperatures. Embargoed the cream cheese and butter patties. PIC discarded at time of inspection. Discussed with PIC Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping or logging information for items actively held under Time as a Public Health Control. Assisted PIC with creating a policy and logging sheets at time of inspection

Inspector notes: Observed an in use high temperature dishwasher in the facility. PIC was unable to locate an irreversible temperature thermometer at time of inspection. Discussed with PIC sanitizing using high temperature warewashing machines requires an irreversible measuring device to ensure food contact surfaces reach 160°F. Provide approved irreversible measuring device prior to re-inspection
