Inspector notes: Observed several boxes of food on the ground in the freezer. Per person in charge (PIC) the food arrived 3 days prior to inspection. Discussed with PIC food must be stored at least 6 inches off the ground at all times to prevent contamination from the premises. PIC put the food on the available shelving at time of inspection

Also observed missing and separated caulking on the fixed parts of the ventilation system in the kitchen on the cookline. Discussed to apply high moisture caulking along the fixed equipment sinks and urinals and apply high temperature caulking on the fixed parts of the ventilation system to create a smooth and cleanable surface to prevent accumulation of organic matter and grease buildup

Inspector notes: Observed a tight lidded, deep container exceeding 4 inches to have zuppa toscana that was made the previous day to have a center temperature of 47*F to 49*F. Discussed with Person in Charge (PIC) cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Also discussed with PIC TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Embargoed the zuppa toscana and PIC discarded at time of inspection

Inspector notes: Observed the industrial can opener to have a dull blade and buildup of metal shavings around a worn down gear. Discussed with PIC the blade should be maintained and sharpened as often as necessary to avoid dullness as to not incorporate metal shavings into the canned goods product. PIC took the can opener out of use at time of inspection
