Inspector notes: Observed hamburger patties in the hot holding unit ranging from 110*F to 112*F. Ambient temperature of the unit was 107.2*F using min/max thermometer. Per the person in charge, the hamburger patties were delivered from caterer at approximately 9 am, time of inspection was 9:50 am. Corrected at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection
