Inspector notes: Observed a metal container of black beans in the cold top with a probed temperature of 54 degrees F. Observed cooked peppers and onions in the drawer under the cook top with a probed temperature of 49 degrees F. Person in charge stated both items were prepared that morning within the last couple hours. Person in charge relocated both items to the walk-in to cool properly to 41 degrees prior to transferring to the cold top. Observed large metal pan and a large plastic container with cooked beans inside the walk in. Person in charge stated the items had been placed in the walk-in to cool at 1pm. At 2:50pm beans had an internal probed temperature range of 108 - 118 degrees F. Advised person in charge for proper cooling, must be cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F and 41°F or less. Person in charge placed items back on stove to reheat to 165 degrees F
