Inspector notes: Observed several boxes of food on the ground in the freezer. Per person in charge (PIC) the food arrived 3 days prior to inspection. Discussed with PIC food must be stored at least 6 inches off the ground at all times to prevent contamination from the premises. PIC put the food on the available shelving at time of inspection

Inspector notes: Observed separate caulking or orange organic matter on the caulking along the handwash sink, the three compartment sink and the urinals in the men's restrooms. Also observed missing and separated caulking on the fixed parts of the ventilation system in the kitchen on the cookline. Discussed to apply high moisture caulking along the fixed equipment sinks and urinals and apply high temperature caulking on the fixed parts of the ventilation system to create a smooth and cleanable surface to prevent accumulation of organic matter and grease buildup
