Inspector notes: Observed several containers of tacos with cooked pork and chicken in shallow covered pans stacked on top of each other. Tacos were cooling at 55-60F and, per PIC and labels, were prepared less than 2 hours prior to inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Lids were removed and containers were unstacked to facilitate rapid cooling - inspector verified temperatures

Inspector notes: Observed a package of hamburger patties being thawed in a container of still cool water. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. PIC moved container fo sink basin and continued to thaw hamburger under cold running water
