Inspector notes: Observed cooked chili (45-47°F) in a deep, clear plastic container with the lid on in the walk-in. Staff stated that the chili had been cooked the previous night and was placed in the walk-in to cool (see embargo). Heavy condensation was observed on the top of the lid. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours, for a total of 6 hours of cooling. Discussed cooling methods with staff, and guidance was sent via email. Do not place lids on cooling foods until they reach 41°F
