Inspector notes: Observed peeling and chipping paint near the prep surfaces in the cold room. Also observed orange organic matter built up on many of the walls. Staff to resurface damaged areas and scrub discolored areas. Discussed managing condensation on the walls to prevent rust buildup. The resealed area must be smooth, easily cleanable, and not made of porous-absorbable materials. Proper repair is required. Do not use unapproved methods. Observed a leak from the drop-hang faucet of the three-compartment sink, causing water to spill into the rinse basin. Alerted the manager, who plans to put in a work order for the faucet.
