Inspector notes: Observed deli slicer with accumulation of dried up deli meat on food contact surfaces. According to PIC, slicer had last been used day prior to inspection. Also observed deli slicer covered with plastic bag with dried up food debris on food contact surfaces, employee stated slicer is not in use. Please maintain a regular cleaning schedule of 4 hours to prevent accumulation of debris. Discussed using cleaning logs or timers. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection
