Inspector notes: Observed four items (including potatoes, butter, eggs, etc) being monitored using time as a control with start times of 9:03 which is the inspector's arrival time. When using time as a control, the discard times of food products must be the actual times when the food is removed from temperature control. Time control procedures were reviewed with the PIC. Keep accurate time accounting when using time as a control. The foods were all within safe time frames and would be served within four hours.
