Inspector notes: Observed tomato basil soup holding on a steam table on the prep line at 107°F. According to the cook, the tomato basil soup had been removed from the walk-in about an hour prior. Per cook, servings of the soup were heated and served earlier and the rest of the soup was put on the steam table. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Tomato basil soup was reheated to 165°F at time of inspection. Discussed proper hot holding and reheating practices with the person in charge (PIC) during the visit
