Inspector notes: Observed bagged shredded lettuce sitting in spilled Au Jus sauce in the standing refrigerator by the back office. Alerted the manager, who sanitized the bottom of the lettuce bags and cleaned up the spill at the time of inspection. Discussed cleaning up spills as soon as they happen and covering all cold-hold sauces. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff, which resulted in the violation
