The red and green salsas measured with an internal temperature of 60 degrees F. The salsas were placed in the cooler approximately 2 hours ago and were placed in the walk-in refrigerator for rapid cooling. Discussed cold holding. The beverage cooler will not be used to store TCS food items until in good repair. The establishment can operate safely without the use of this cooler
