Inspector notes: Employee at make line cracked raw shell eggs into egg cooker, removed gloves, put on new gloves, and began to handle ready-to-eat foods at a prep-style refrigerator without washing hands before putting on the new pair of gloves. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Upon instruction by inspector, PIC discussed the situation with the employee and the employee properly washed hands and put on new gloves
