Please ensure all food items are cooled in shallow, uncovered containers, or ice baths to ensure all cooling temp/time benchmarks are met (135-70 degrees F in 2 hours, 70-41 degrees F in an additional 4 hours)

The PIC stated the booster heater is not working and the 3-compartment sink was set up, and will be used in the meantime
