Inspector notes: Observed items such as portioned ham, beef, and turkey in walk in cooler in tightly wrapped containers at 50 - 55*F Cold hold to be 41*F or lower. As per the person in charge, the items were portioned and placed in containers more than 6 inches deep and tightly covered approximately one hour prior to inspection starting. Staff split containers and loosely covered to cool rapidly. Advised staff to cut amount in each container to half and repack in larger container when food is at 41*F
