Inspector notes: Observed cutting knives on the cutting board at the cold top being used to cut sandwiches. Person in charge stated they clean the utensils every 24 hours at closing or when needed. Advised person in charge since the utensils are coming into contact with cooked eggs, cheese, and sliced tomatoes that they will need to be cleaned every 4 hours. Person in charge took the utensils to the 3 compartment sink to be washed and brought out new knives. All food-contact surfaces that contact time/temperature control for safety (TCS) foods must be cleaned every 4 hours by washing, rinsing, and sanitizing
