Inspector notes: -- In reach-in cooler, observed penne pasta, boneless specialty chicken, tomatoes, and chicken wings with expiration dates of 7/13/24-7/14/24. Also observed opened bags of sausage and boneless specialty chicken without date mark label on them. The person in charge (PIC) stated the sausage and boneless chicken were opened yesterday. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. All RTE/TCS foods were properly date marked to 7/14/2024 at the time of inspection
