Inspector notes: Observed meat department employee cleaning raw chicken cutting board at 3-comp sink without use of sanitizer. Employee put cutting board away as clean. Cutting board inspected and raw chicken particles and slime found on clean contact surfaces. Observed saw type meat cutting apparatus with wiped down and cleaned by employee at time of inspection. No sanitizer was used and meat particles found throughout surfaces and crevices of machine. PIC stated that machine is dissembled once per day for a deep clean. Discussed that machine needs to be cleaned every 4 hours when in use to prevent build up of bacteria at room temperature. Both items washed rinse and sanitized at time of inspection
