Inspector notes: On the bottom shelf of the cabinet warmer oven on the line (set to 145°F) observed mushroom jus/88°F and ribeye demi-glaze/90°F. On the counter, shelf, and expo station by the grill observed assorted sauces including beurre blanc/131°F, mushroom cream sauce/109°F, miso emulsion, 111°F, and queso/80°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. After discussion with the person in charge it was determined all sauces were prepared within the last 2 hours
