Inspector notes: Breakfast sausage observed cooling (100*F) in a saran wrap covered container in walk-in cooler. The saran wrap was removed to facilitate rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrected at time of inspection

Inspector notes: -- Handwash station near char-broiler did not have paper towels available for hand drying. Handwash sinks must be supplied with hot water of at least 100°F, soap, and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. The person in charge (PIC) stated they were out of paper towels to restock the dispenser, and they are expecting a delivery tomorrow (5/13/25). Provide proof of paper towels available for all hand wash sinks prior to 10-day re-inspection. The establishment has 2 additional hand sinks available in kitchen to continue operating safely while they await delivery
