Inspector notes: Observed an open gap around the door, mainly at the top, of the front counter reach-in refrigerator, see violation #22. The gasket appears to be worn out and the door is very loose. Discussed repairing the door and replacing the gasket so that the unit can maintain 41F or less. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection

Inspector notes: Observed grilled onions hot holding in the steam table in front of the grill with internal temperatures of 110-118F, probe thermometer, verified by PIC. PIC voluntarily discarded the onions, see embargo form. The steam table stopped working the morning of the inspection, according to PIC. Discussed storing the grilled onions in a metal pan on the grill or in a hot holding tray. Maintaining cooked TCS foods at 135F or more during hot holding is required to prevent the growth of pathogens
