Inspector notes: Observed employee use gloved hands to pick up a raw ground beef patty from the chest freezer and place it into the grill. Employee then used the same gloved hands to pick up and assemble the bun and garnishes for a sandwich. Inspector instructed employee to wash hands and change gloves. Employee discarded the bun and garnishes, see embargo form. Discussed the importance of washing hands and changing gloves after contamination, such as from raw proteins. Pathogens can be transferred from the raw beef to the ready-to-eat bun and garnishes by the contaminated gloves. Hands should be washed between glove changes, when changing tasks, etc. to prevent contamination of food and food contact surfaces. PIC will retrain employees on proper handwashing, when to wash, and to use the tongs to pick up the raw proteins
