Conveying Sewage
Inspector notes: Observed a sewage leak coming from the base of the mop sink. Manager explained that there is an open drain pipe that provides the connection into the sewer and the base of the 3- comp sink caulking has failed causing the sewage to leak out. Staff is using a squeegee to relieve the sewage out the back door as there is no place for it to drain. Please repair mop sink drain and base as to not convey sewage by friday 8/15/2025

Inspector notes: Upon start of inspection observed all line items on time control set for at 10:30am discard with stickers. PIC stated all items had been brought out at 6:30am. Temperature of cut lettuce 53*f degrees and sliced tomatoes 75*f degrees. Discussed variation of temperatures with manager. as time control agreement is to start the 4 hour time window from 41*f degrees up to ambient temperature. Manager stated items had been rotated sometime between then and now around 8-9am. Discard times updated with correct times. Inspector asked manager if Burger king time control policy document could be provided, none could be provided at time of inspection
