Inspector notes: In the walk in cooler, observed cooked beef tongue having a date marking of 9/24. Also observed rolled tacos, pozole, opened hotdogs, and cooked potatoes with no date marking. Person in charge states the foods with no date marking were made/prepared/opened 1-4 days prior to the inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Also, all RTE/TCS foods missing a date marking were properly date marked at the time of inspection
