Inspector notes: Observed reduced oxygen packaged raw beef in a commercial vacuum bag. Per PIC, depending on the cut of beef, some of the beef is stored for over 48 hours in ROP, and some in less than 48 hours. PIC removed beef from ROP at time of inspection. PIC shall obtain a variance for this method and discontinue method until approval from the Department. A variance/HACCP must be obtained prior to conducting any specialized processes. Sauce was observed at 3:40 pm. Sauce was discarded as no one could verify when temperature reached 135 degrees Fahrenheit and if it cooled from 135 to 70 degrees Fahrenheit in the two hours
