Inspector notes: Observed cooked rice cooling at room temperature. The rice measured with an internal temperature of 72 degrees F and was prepared less than 2 hours prior to inspection. Instructed PIC to move the rice to walk-in refrigerator to expedite the cooling process. Active cooling starts when the cooked product is approximately 135 degrees F. Observed cooked chicken wrapped in tortillas and stored in container with plastic wrap and a lid securely on the container. The cooked chicken measured with an internal temperature of 62 degrees F and was prepared 3 hours prior to inspection. The lid and plastic wrap were removed from the product to allow for proper cooling. Discussed cooling methods
