Inspector notes: Observed no hot water available at all sink fixtures. The maximum water temperature available is 68*F at the hand sinks, three-compartment sink, prep sink, and mop sink. PIC stated that the water supply to the mop sink was leaking and shutting off the water to the water heater (pipes also connected to the mop sink) stopped the leaking. PIC stated a repairperson will be onsite today to fix the water leak. Informed PIC that hot water is necessary for proper hand washing and ware washing and must be supplied prior to 24-hour reinspection. Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Provide adequate hot water at all sink fixtures prior to re-inspection
