Per person in charge (PIC) the items were sliced and prepped 10 minutes prior to inspection. Discussed with PIC TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. PIC relocated to adequate cooling refrigeration
