Inspector notes: Observed sanitizer at the 3 compartment sink with a concentration of 0ppm for quat ammonium. PIC tried to re-filled 3 compartment sink with new sanitizer water; but it was observed the bag for the quat ammonium was empty. PIC re-filled the 3 compartment with new bag attached and tested to show the proper concentration for quat ammonium. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces were properly sanitized at time of inspection. A chemical sanitizer like quat ammonia, must have a concentration between 150-400ppm for sanitizing food contact surfaces. . (2nd consecutive violation)

PIC removed shut-off (spray nozzle) downstream from atmospheric vacuum breaker at time of inspection. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers

The milk products did not have a time indicating when the milk products were taken out of temperature control. Per PIC, the milk products were taken out less than 2 hours prior to inspection. All TCS foods being held under time as a control were properly time stamped at time of inspection.
