Inspector notes: Observed a chlorine dishwasher with 0ppm of chlorine concentration after final rinse. There were plates from breakfast being washed in dishwasher at time of inspection. Chlorine test strips were available and easily accessible. It was determined that the establishment was out of the chlorine solution feeding the dishwasher. Advised PIC to sanitizer dishes at the 3 compartment sink in a quat solution, which tested at proper concentration between 200-400ppm. Quat test strips were available onsite. Chlorine sanitizer must have a concentration of 50-100ppm

Inspector notes: Observed multiple containers of open sandwich meats and cheeses without date marks being cold held inside the reach-in cooler. All products were within the Max 7 day holding period per PIC. Adjusted date marks were placed on open products. Discussed with PIC that date marking shall be done within 24hrs of preparing or opening RTE TCS food. Listeria is the pathogen of concern. RTE/TCS can be kept for a max of 7 days when held at 41*F or less
