Inspector notes: Cooked sausage gravy with an internal temperature of 100 degrees was covered with plastic wrap on a shelf in the walk-in cooler. PIC stated that the gravy was taken off steam table at 10 am and placed on the counter until it was brought into the walk-in approximately 30 minutes before inspectors arrival. PIC discarded the sausage gravy since it did not reach 70 degrees within 2 hours. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling
