Inspector notes: Observed pizza tomato-based sauce out at room temperature (74°F). The Person In Charge (PIC) stated the sauce had been left out for 1 hour and 30 minutes. No time indicator was logged or on the container. The person in charge added a sticker with the discard time onto the container, at time of inspection. Establishment to use time indicators and have their time control policy available and posted near were Time Temperature Control for Safety (TCS) foods are placed on time control. Alarms, Time indicator stickers, or a time control log can be used.
