Person in charge (PIC) stated that a plumber is scheduled to come and repair line. Employees are using the other nearby hand wash sinks until sink is repaired. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection

Discussed with person in charge (PIC) that the bags of bread are touched with bare hands and come into contact with other areas of the establishment. If the bags are directly touching the food, it is a contamination risk. PIC moved the bags and placed them on top of the unit next to the bowls at time of inspection

Inspector notes: Observed no sanitizer at the mechanical ware washing machine at time of inspection. The chlorine test strip measured 0ppm. Discussed with person in charge (PIC) that chlorine sanitizer shall be at 50-100 PPM (dependent on mfg). PIC saw that the ware wash machine was out of sanitizer and opened a ticket for service. PIC will use 3-compartment sink and chlorine bleach for sanitizing until the ware wash machine is back in order
