Inspector notes: Observed two chlorine dishwashers with 0ppm of chlorine concentration after final rinse. The dishwasher in the server's station outside the main kitchen and the one inside the main kitchen. There were cups being cleaned in dish machine at the server's station. Chlorine test strips were available and easily accessible. PIC made several attempts to prime both dishwashers, each time, there was 0ppm of chlorine after final rinse for both. PIC called for service at time of inspection. Advised PIC to use the 3 compartment sink until dishwasher is fixed. The quat dispenser at the 3 compartment sink was dispensing proper concentration between 200-400ppm

Inspector notes: Observed a chlorine dishwasher at the service station outside the main kitchen with 0ppm of chlorine concentration after final rinse. Chlorine test strips were available and easily accessible. There was evidence that dishes were recently washed in dish-machine. It was determined that the sanitizer bottle feeding the dish machine was empty. PIC stated that they had extra sanitizer in chemical room but did not have time to change it at time of inspection. Advised PIC to use the 3 compartment sink until dishwasher is fixed. 3 compartment sink has a quat dispenser dispensing proper concentration between 200-400ppm and test strips were avaialbale. Advised PIC to regularly check sanitizer concentration to ensure dishes are sanitized every time
