Inspector notes: Observed an in-use ice machine with black, slimy, organic-like material growing behind and on the deflector panel. Per PIC ice from the machine is used in customer drinks. Educated PIC that ice is considered a food item when used in customer drinks. Instructed PIC in clean-in-place procedure using a hot soapy rinse, hot water rinse, and hot water plus sanitizer rinse. Correct by next routine inspection

Inspector notes: Hash browns on the counter without time as a control sticker. Spoke with restaurant associate and they said that the hash browns are cooked around 8am and then stay on the counter until 1130am. Ensure a written time as a control procedure is readily available and each item that is under time as a control has a time stamp. All TCS foods being held under time as a control were properly time stamped at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control

Inspector notes: Ice scoop laying in the ice with handle laying on the ice. Spoke with PIC and they put the ice scoop handle up. Ice scoops may be stored handles up in an ice bin except for an ice machine

Inspector notes: Cooked chili with a date mark of 6/2 (3 days past expiration) and salsa with a date mark of 5/11 (1 month past expiration) were cold holding in the walk-in cooler. When brought to PIC's attention the items were discarded. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)

Inspector notes: No QUAT test strips in the establishment to test the wiping buckets. PIC will order new test strips. A re-inspection will occur on or before 6/24/2025 to verify that test strips have been obtained for the establishment.est strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection
