Reviewed approved food storage areas with the PIC: food must be stored in a clean, dry location and at least 6 inches off the ground at all times to prevent contamination from the premises

Inspector notes: -- Cheddar cheese sauce in hot holding dispenser measured at 95°F using probing thermometer. The PIC stated the cheese was removed from warmer and placed in the dispenser about 2 hours before the inspection (9:00 AM). At the time of inspection, the cheese sauce was discarded. The PIC noticed the unit was turned off. After turning unit on, the temperature was able to maintain hot holding temperatures for new bag of cheese sauce. Ensure TCS items hot holding are maintained at 135°F or above
